Low Carb Pizza! Yes, you read that right.

So I found this pizza dough recipe at Your Lighter Side.  The secret is using cauliflower.  I didn't read the directions correctly, me-no, and accidentally cooked the whole pizza with toppings at once.  You are supposed to cook crust first, then add toppings and broil.  Anyways, it still turned out good and Karson loved it.  I think next time I'll follow the directions and it will be even better.  Karson has been doing atkins off and on the past few years and this was a great way to eat low carb.  This recipe is so good that she was even on Dr. Oz and got to share her story and a few recipes.  Thanks Jamie!

Memorial Day Weekend

We decided to grill this weekend.  We have had a grill, but it needed to be cleaned and needed more propane.  So Karson and his friend got it ready and we used it Saturday, or should I said they used it.  I helped cut up everything and season the meat and while they grilled I made cream cheese stuffed jalapenos wrapped in bacon.  Yumm!  It was all really good.  Thanks boys for cooking for us today.

 Cream cheese stuffed jalapenos wrapped in bacon

Here is what you will need:
bacon, jalapenos, and cream cheese
 Cut the jalapenos in half and deseed them
 Fill with cream cheese
 Wrap with half a piece of bacon and secure with a toothpick
 Bake at 375* for about 15 minutes

Field Trip Fun!

On Thursday, I went with 4th grade to the zoo and park. It was really fun, the weather was nice, and the kids behaved. We had a great day! I had not been in years and I think I enjoyed it more than some of the kids and most of them knew where everything was.

Family Graduation Celebration

The Sunday after graduation, almost all of my family came in town to celebrate.  I am so blessed to have such an amazing family who love and support me in everything I do.  Thank you all so much for coming and supporting me.  It means a lot and I truly appreciate each and every one of you and what you mean to me.  Thanks especially to my parents, sister and loving husband.  I couldn't have done it without y'all.  Love you guys!

A long time coming

Last weekend I graduated with a Bachelor's of Arts in Interdisciplinary Studies from the University of Texas at Arlington.  It is great to finally be done with school and it was such a long time coming.  I decided about 4 years ago to go back to school.  I had decided to go to cosmetology school and really enjoyed being a hairstylist, but I felt God calling me to do more with my life and to teach and make a difference in children's lives.  This is something I had over looked before, I think not wanting to go to school for 4 years.  So with the decision to continue school, I pretty much had to start again, considering I only had 12 college hours.  I finished up by core classess through my community college and then was accepted into the University of Texas at Arlington in 2009.  Karson and I were married that summer and then in the fall I began UTA through a distance program at the community college and worked as an Aide at Midway ISD and went to school at night.  It was quite a work load and a little stressful, considering we had just began our marriage, but we managed.  Then, this year I also worked full time as an Instructional Aide and got to do my student teaching though my job and go to school at night and finished up the spring classes on the weekends.  Thought this journey I have become a stronger person and I am so thankful for the support of my wonderful family and friends.  I am happy and proud to complete this chapter of my life and start a new one.  I am still looking for a teaching job, as you know it is kind of rough right now with all the budget cuts, but I am hopeful and trusting that God has a plan for me.
